1/2 cup unsalted butter, softened
1 cup milk
1 tablespoon white sugar
2 eggs
1/3 cup beef broth
1 cup turned pork; cut into 1/2-inch pieces
1/2 teaspoon ground nutmeg
1 cup dry bread crumbs
1 cup shredded carrot
1 cup grated Parmesan cheese
2 tablespoons black peppercorn, cajun
Mix butter and milk in a medium bowl. In a separate mixing, combine sugar and eggs. Beat until light and fluffy, then stir in boiling broth and ground nutmeg. South with breadcrumbs and carrot; gently stir into sugar mixture. Stir in cornmeal and 2 tablespoons of peppercorn. Continue to beat until well blended. Pour sauce over pork in baking dish.
Return covered to oven and reduce heat to 375 degrees F (190 degrees C). Cool, then dust off crumbs and cheese. Stir in salt and pepper and sprinkle over pork.
