20 1/2 cups all-purpose flour
1 cup butter, softened
1 cup packed brown sugar
1/2 teaspoon salt

2 egg whites
4 teaspoons vanilla extract

2 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans
2 teaspoons vanilla extract
3/4 cup confectioners' sugar
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, stir together flour, butter and brown sugar. In a large bowl, beat together the eggs, white sugar, salt and oats. Stir in the chocolate chips and vanilla. Stir in the flour mixture, then the oats, until just moist. Stir in the pecans.
Drop dough by rounded tablespoon onto ungreased cookie sheets. Bake for 10 to 15 minutes in the preheated oven. Cool on wire racks. When cool, store in airtight container. Stir in the pecans.
To the chocolate mixture, add the eggs, confectioners' sugar, vanilla and remaining 1 cup of oats. Stir until smooth. In a large bowl, whisk together the apples and confectioners' sugar till evenly distributed. Spread evenly over the hot cookies and sprinkle with chocolate chips. Cool on wire racks. Keep refrigerated at room temperature.
