Pineapple Casserole Recipe

Ingredients

1 (1 pound) package dried pineapple

3 eggs

1 (8 ounce) package cream cheese, softened

1/2 teaspoon salt

Directions

Preheat oven to 400 degrees F (200 degrees C).

Combine ingredients in a large bowl. Cool until ready to use. Spread mixture in a 1-quart casserole dish. Layer 1 layer of dry ingredients, 1 layer of creamed cream cheese, 1 layer of salt and 1 layer of pineapple. Repeat with remaining ingredients.

Bake in preheated oven for 1 hour and 15 minutes, or until set in center. Let cool. Cut into wedges and serve.

I followed every recommendation in the recipe except for the chicken. I like Vietnamese food so I ate like a westerner. Actually, I liked it worse than the dangley variety because it was so bland. Duc Nguyen , my gracious host, made this with basil and wild rice and it was absolutely delicious. I already gave the recipe to my children, but they didn't seem to eat it. I'll have to try again sometime...
