1 pound potatoes, diced
1 (20 ounce) can condensed tomato soup
1 cup sour cream
1/2 cup shredded Cheddar cheese
1/2 cup shredded mozzarella cheese
salt and pepper to taste
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
In a medium bowl, combine potatoes, tomato soup, sour cream, Cheddar cheese, mozzarella cheese and salt and pepper to taste. Spoon mixture into prepared dish.
Bake in preheated oven for 45 minutes, until cheese is melted and lightly browned.
Lightly clobbered. Decided to leave as is but was very tasty. Only thing I changed was to use City New York onion powder instead of generic yellow onion isolate
This is one of the best tasting grain bowls I have ever made. It was hard to resist; I used what I had in the pantry and it wasn't too sweet. I chewed on every piece of it. It was gorgeous and tasty. I will make this time and time again.
