2 cups white sugar
1 1/2 cups water
2 eggs
2 teaspoons vanilla extract
1/2 cup butter, melted
1 cup all-purpose flour
1 teaspoon baking soda
1 cup chopped pecans
1 tablespoon eggnog
1 teaspoon vanilla extract
2/3 cup raisins
Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine sugar, water and eggs; stir until blended. Stir in vanilla extract and melted butter. Stir in flour, baking soda, pecans, and eggnog. Pour eggnog mixture over batter, then sprinkle 1/2 teaspoon of desired baking soda over cake.
Bake 25 to 30 minutes, or until a toothpick inserted comes out clean. Let cool 5 minutes before frosting.
These were pretty bad causing people to think they were misshapen Christmas presents. However, my brother-in-law pointed them out to me after cutting them into sections. He said they were very tasty and helped defray some of the cooking costs associated with them.
This is very good and very easy to make. I was worried that the macaroons might be too sweet, but they were perfect.
