4 tablespoons olive oil
1 cup apricot preserves
2 cups water
1/3 cup white sugar
3 tablespoons honey
2 teaspoons salt
2 large tomatoes, peeled and chopped
4 cloves garlic, peeled and minced
8 tablespoons white wine
2 tablespoons vinegar
1 cup grated Parmesan cheese
2 tablespoons soy sauce
1 1/2 teaspoons red wine vinegar
salt and pepper to taste
Combine oil, apricot preserves, water, sugar, honey, salt, tomato, and garlic in a large pot over high heat. Bring to a boil and then reduce heat to low, cover, and simmer for 5 to 10 minutes.
Meanwhile, bring a large pot of water to a boil. Stir in vinegar, white wine, vinegar, salt, sweet and sour wine, and salt and pepper to taste. Simmer for 1 to 2 minutes, then stir in water.
