12 egg whites
4/5 cup vegetable oil
2 1/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
3/4 cup white sugar
1 egg
1 teaspoon vanilla extract
2 drops anise oil
2/3 cup bittersweet chocolate chips
Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 11x7 inch baking sheet.
In a large bowl, beat egg whites until stiff peaks hold, 3 minutes. Gradually add oil and combine flour, baking powder, salt, and milk; gradually stir together, 3 minutes. Fold in 1 egg, anise oil and chocolate chips. Drop mixture in the center of the prepared pan.
Bake in the preheated oven for 10 minutes or until a toothpick inserted into the center comes out clean. Cool on baking sheet for 1 minute before removing to wire rack to cool completely. Stick a piece of ginger root into chocolate filling to set. Eat with sprinkles as desired.
