3/4 cup rolled oats
1/2 cup butter, softened
1 cup white sugar
1 cup rolled oats
3/4 cup all-purpose flour
1 cup cup boiling water
1/2 cup lemon juice
1/2 teaspoon baking soda
Preheat the oven to 375 degrees F (190 degrees C). In a medium bowl, stir together the oatmeal, butter and sugar. Cut in the flour until very fine. Stir in the eggs and vegetable mixture. Stir in the soda to coat well. Fold in the brown sugar and rolled oats. Drop the dough by heaping teaspoons onto the prepared cookie sheets at least 3 inches apart. Cookies should be at least as long as your cookie sheets.
Bake for 12 to 15 minutes in the preheated oven, until bottom is light brown. Remove from baking sheets to cool on wire racks. When cool, store in an airtight tin. They are very good to have on hand when ready to use.
