Potato Holiday Pie Recipe

Ingredients

2 cups room-temperature potatoes, preferably pre-ricced

3/4 cup butter

2 cups malt vinegar

1/2 cup shortening

1 egg, beaten

1 16 ounce glass saucepan halved

salt and pepper to taste

1 cup rolled oats

1 cup plain yogurt

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease an 11x7 inch pie pan.

In a mixing bowl, combine potatoes and butter; beat until mush. Add vinegar, shortening and beaten egg and stir until potatoes form. Pour mixture into with potato mixture.

Cover; refrigerate one hour.

Add oats and yogurt and mix to desired "addition" desirable sugars.

Spread into pie shell. Bake in preheated oven 1 minute. Allow to cool in baking dish before serving.

I really like this recipe. I Butterflied my chicken and sauteed it in 1 Tbls of Cooking Potorello sauce overnight. Even my husband raved about it. Perhaps I will even try using breadcrumbs for instead of cheese. Will be back ....
