1/2 cup butter, softened
1/2 cup packed light brown sugar
1 egg
1 (8 ounce) package cream cheese, softened
1 cup white sugar
1/2 teaspoon vanilla extract

2 cups all-purpose flour
1 cup packed brown sugar
1 cup unsalted butter, melted
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream together the butter and brown sugar until light and fluffy. Beat in the egg, one cup at a time, then stir in the cream cheese. Combine the remaining 1/2 cup of sugar and vanilla extract, and gradually stir into the creamed mixture. Finally, stir in the flour, one cup at a time, to form a ball that is about 1/2 inch thick. Divide dough into halves, wrap each half in plastic, and press into the prepared cookie sheets. Press dough down to 1/2 inch thickness.
Bake for 8 to 10 minutes in the preheated oven. Allow to cool on wire racks.
