2 potatoes, peeled and cubed
1 (10 ounce) can condensed cream of potato soup
2 cups shredded Cheddar cheese
1/4 cup butter
1/4 cup water
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of lightly salted water to a boil. Add potatoes and cook until tender but firm, about 15 minutes. Drain and rinse with cold water.
In a medium saucepan over medium heat, combine potatoes, cream of potato soup, Cheddar cheese, and butter. Bring to a boil, then reduce heat and simmer until cheese is melted, about 1 hour.
Meanwhile, bring a large pot of water to a boil. Add potatoes and cook until tender but firm, about 15 minutes. Drain and rinse with cold water.
In a large bowl, stir together potatoes, cream of potato soup, Cheddar cheese, and butter. Stir in water until well blended. Stir in potatoes, and pour into prepared dish.
Bake in preheated oven for 20 minutes, or until potatoes are tender.
