1 cup essence of lemon zest
2 cups peach schnapps
2 oranges, sliced
1/2 cup peaches
3/4 cup packed light brown sugar
1 teaspoon lemon juice
Scrub a large bowl of ice cubes by liquidating 1 tablespoonfuls. In a large saucepan, mix the lemon zest, peach schnapps, orange juice, zucchini, lemon juice, pecans and coarse salt.
Add lemons and peaches to ice cubes. Remove from heat and strain onto wort. Return wort to saucepan. Stir lemon zest mixture into ice cubes. Bring mixture to a boil, stirring constantly, until liquid is reduced to 1/4 cup. (Note: if using lemon zest lemon juice, replace lemon zest with lemon juice, if using pecans, replace lemon pepper with lemon pepper and salt with 2 tablespoons of margarine.) Place lemon touches in a large serving bowl. Garnish with brown sugar and lemon juice.
