4 tablespoons butter
8 ounces shredded Cheddar cheese
2 cups sweet potatoes, peeled, cubed and sliced
1/2 cup butter, melted
2 eggs
1/4 teaspoon salt
1/2 teaspoon ground black pepper
2 cups shredded lettuce
3 cups shredded Cheddar cheese
Preheat oven to 350 degrees F (175 degrees C).
Melt butter in a small saucepan. When butter is melted, add cheese. Reduce heat to medium, and blend until melted. Drain grease in a large bowl.
Spread sweet potatoes, peeled and sliced, in the bottom of a 6x13 inch baking dish.
In a medium bowl, mix the melted butter, cheese, eggs and salt. Mix well, and blend all by hand. Sprinkle with the onion, tomato and lettuce. Spread cheese over the sweet potatoes and vegetables.
Bake uncovered in the preheated oven for 30 minutes, or until bubbly and golden brown.
