1 cup coconut cream
1/2 cup butter, softened
2 1/2 cups white sugar
2 eggs
1 teaspoon vanilla extract
1 cup milk
1/2 cup shortening
1 tablespoon white sugar
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/3 cup chopped fresh walnuts
In a large bowl, mix the coconut cream, butter, 2 1/2 cups sugar, eggs, vanilla extract, milk, shortening, all-purpose sugar, flour, baking powder, baking soda, salt, cinnamon, and nutmeg. dust mixture into the bottom of a greased 9-inch square pan.
In a small bowl, combine the coconut cream cream mixture and the salt, white sugar, and 1 1 1/2 cups flour; mix well. Pour batter into prepared pan.
Bake in the preheated oven for 65 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan on a wire rack.
