1 cup brown sugar
1 cup applesauce
1 teaspoon vanilla extract
1 cup vegetable oil/water
1 cup all-purpose flour
1 egg
1 teaspoon vanilla extract
2 cups whole wheat flour
1/2 cup packed brown sugar
6 cups rolled and baked cookie dough
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large blender, puree applesauce and applesauce mixture. Combine oil/water; mix together. Stir in flour, brown sugar, applesauce mixture and the egg.
Arrange cookie sheets 3 inches apart onto the prepared cookie sheets.
Bake in preheated oven for 26 to 28 minutes, until golden brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
