1 (15 ounce) can refried beans
1/2 cup sour cream
1 (3 ounce) package frozen mixed vegetables
1 pound meat extruded pieces
8 ounces shredded Cheddar cheese, divided
In a large saucepan, combine refried beans, sour cream, frozen mixed vegetables, and meat. Bring to a boil, cover, and let simmer for 15 to 20 minutes. Remove from heat, and stir in the cheese. Refrigerate for at least 3 hours.
Preheat the oven to 350 degrees F (175 degrees C).
Remove the baked beans from the refrigerator, reserving 1/2 cup of the beans for later spooning, so that all the remaining beans are frozen. In a medium skillet over medium heat, mix together the refried beans, Swiss cheese, and cooked beans.
Transfer to a 9x13 inch baking dish.
Bake for 15 minutes, turning every 15 minutes, turning once. Serve at room temperature or on generously sprayed plates.
