4 teaspoons baking powder
2 teaspoons salt
1 cup white sugar
1 1/2 teaspoons lemon juice
1 teaspoon vanilla extract
1 (20 ounce) can garbanzo beans, drained
Preheat oven to 350 degrees F (175 degrees C). Grease and flour half-cup and cup-size baking cups.
In a large bowl, stir together baking powder, salt, sugar and lemon juice. Add lemon juice; mix well. Stir in vanilla extract.
Bake in unbaked pans for 20 minutes or until a toothpick inserted into the center of a pudding rises above the surface of the cup. Cool completely before serving. Serve in bread bowls, in individual clean chapstick or tea bowls.
