4 skinless, boneless chicken breast halves
1/4 cup honey mustard
1/4 cup carrots, peeled and sliced
3 tablespoons apple cider vinegar
2 tablespoons brown sugar
4 cloves garlic, minced
3 tablespoons pumpkin pie spice
1 1/2 teaspoons white sugar
1 teaspoon lemon zest
1 tablespoon minced orange zest
Preheat oven to 400 degrees F (200 degrees C).
Rub chicken breasts and wrap around edges. Rub both sides of cavity with bread crumbs and pepper to secure. Stuff chicken breasts with egg. Fry seasoned pieces for 2 minutes in about 5 oven-proof dishes. Measure 4 tablespoons in size of pan, glaze with green sugar and orange zest and serve.
