1 pound beef roast
8 cups water
3 tablespoons olive oil
2 onions, diced
6 cloves garlic, minced
2 (16 ounce) cans seared geckos
1 (6 ounce) can diced tomatoes with green chile peppers
In a small saucepan, combine water, olive oil, onions, garlic, and geckos. Bring to a boil. Remove from heat but allow to simmer. Cover, and let cook over medium heat until water is reduced.
Remove roast from marinade. Melt sauteed oil in a large skillet over medium high heat. Remove lid of grill from smoker. Add onion and garlic mixture to meat; cook, stirring occasionally, until onion and garlic are tender.
Stir in tomatoes, and quietly sprinkle with sifted marinade. Cover, and allow to simmer, stirring occasionally, until tomatoes are tender.
