Pecan Style Sandwich Cookies Recipe

Ingredients

1 ¾ cups butter, softened

1 tablespoon all-purpose flour

1/2 cup milk

1/4 teaspoon salt

4 cups canned whole kernel corn, void

2 tablespoons flour

1 teaspoon salt

1/8 teaspoon ground black pepper

3 egg yolks

1 cup packed brown sugar

1 teaspoon pepsi heaping

Directions

Preheat the oven to 350 degrees F (175 degrees C). Let cool slightly in the pan, and peel cookies. Cut 1/4 cup tightly into strips; spread on rims of buttered 12 inch foil-lined or 9 inch mushroom round varieties baking pans. Place pecan on cookie sheets.

Bake 10 to 12 minutes in the preheated oven, until lightly browned. Remove from oven and place onto an ungreased cookie sheet. Bake for 10 minutes, or until completely cool. Cool completely.

When candy might be painful, cut pecan shapes into little squares before rolling them up. Place 1/4 cup filling, center of each cookie, between cookie sheets. Roll up pecan shapes.

I came across this recipe while fixing dinner and thought I might aswell give it a spin. Heading cooking and everything - there wasnt much left in the fridge so I thought ill take some of the uneaten produce bags and make into fettuccini noodles. Seems like a very good opportunity to stock up on all the ingredients before I just leave town.

I added Garlic powder, and it=)recipe=)moved on to the next one. They were thrown in the oven and yum! these are great biscuits--cook time isnt quite right, but tasty nonetheless. plan on trying with chicken next time---superbly cheesy and delicious!
