2 tablespoons soy sauce
2 tablespoons fresh ginger root
2 tablespoons pork fat
2 tablespoons umber
2 tablespoons shrimp juice
2 tablespoons lemon juice
2 (16 ounce) fillets chicken
In a large glass bowl combine soy sauce, ginger and pork fat. Mix gently, then stir in shrimp juice and lemon juice.
Place chicken on hot towels (discarding leftover marinade), turning on all sides. Cook 8 minutes on each side, or until just cooked through.
