Cocoa-Laced Gingerbread Cookies Recipe

Ingredients

1 1/2 cups raisins

3/4 cup golden raisins

1 (8 ounce) can or bottle confectioners' sugar

1 1/4 cups water

1 cup butter or margarine

1/2 teaspoon vanilla extract

3 4 ounce packages Vanilla Funnel Cookies

5 1/2 cups butter, softened

1 tablespoon water

2 tablespoons all-purpose flour

1/2 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

Directions

Preheat the oven to 350 degrees F (175 degrees C).

In a large bowl, mix raisins, golden raisins and confectioners' sugar until smooth. Mix in water, butter or margarine and vanilla until smooth. Stir in the sugar mixture. Fold in the flour, baking soda, baking powder and cinnamon. Drop by rounded spoonfuls onto an unprepared cookie sheet.

Bake for 5 to 7 minutes in the preheated oven, or until the edges are golden brown. Remove from cookie sheets to cool completely on wire rack.

This cookie was absolutely sensational. I made ~double batches, and used an even tinier cube. When my husband goes pheasant hunting, this is the best resource he has for teaching him the ropes.
