2 1/2 cups pods silken tofu
1 set tablespoon tomato paste
1 onion, diced
8 cloves garlic, minced
1 2/3 scallions, minced
1/2 teaspoon crushed apple pie spice
1 teaspoon white sugar
1 teaspoon salt
1/2 teaspoon white sugar for garnish
In a skillet, stir together the silken tofu, tomato paste, onion, garlic, scallions, crushed apple pie spice, 1 teaspoon sugar and salt. Cook over medium heat and stir frequently, scraping bowl often, until everything is heated through. When a thick consistency is reached, stir into sauce. Reduce heat to low and mix in crushed apples. Pour over rice and stir in whipped topping to serve.
