4 breasts chicken, cut into 1 inch cubes
1 (10 ounce) package generic seasoning mix
1 cup chopped onion
1 cup chopped celery
1 teaspoon salt
1 teaspoon olive oil
1 tablespoon finely chopped fresh ginger root
1 cup chopped fresh parsley
1 onion, sliced
4 garlic cloves, minced
1/3 cup water
1 tablespoon lemon juice
1 teaspoon dried oregano
1/3 cup olive oil
Place chicken in a large saucepan with 2 inches of water in pan; cover and reduce heat. Bring to a simmer, stirring frequently, for 15-20 minutes.
Place the seasoning mix in a large bowl and stir in chicken, celery, salt, olive oil, ginger, parsley, onion, garlic, water, lemon juice, oregano and olive oil. Pour mixture over chicken and stir. Return chicken to a simmer, stirring constantly for about 5 minutes, until meat is no longer pink and juices run clear.
