I am not sure if the batter is the right mix of fats or not, but I ate a previous version and this is exactly what I think: sticky, oily, and flat. I think my batter is way too rich, and I would recommend adding some sort of stabilization ingredient like cream, sugar, or heavy cream. This is also why I hate baking with butter, and more power to you if you don't have access to eco friendly baking ingredients!
