1 1/2 pounds bone-in chicken crosswise cuts
1 1/2 teaspoons vegetable oil
2 carrots, grated
1 onion, sliced
2 thin slices bacon
3/4 cup water
1/4 cup milk
Heat oil in a large skillet over medium heat. Remove chicken from skillet and cool. In a large bowl, remove bones, skin strip and juice from chicken.
In a medium bowl, mix oil, carrots, onion, bacon and water. Mix thoroughly and spread mixture in bottom of baking dish.
Bake chicken in preheated oven for 45 minutes. Remove from oven and pour remaining oil over chicken in pan. Bake 20 minutes, or until bacon is crispy and juices run clear.
