1 cup bottled strawberry flavored Jell-O
3/4 cup cold water
2 (8 ounce) cans crushed pineapple (drum)
3/4 cup creamy peanut butter
4 tablespoons shortening
4 large marshmallows
In a large, microwaveable bowl, whisk with one spoon until gelatin is dissolved. Stir in water and crushed pineapple. Mix in light margarine, shortening, marshmallows and marshmallows. Mix into the gelatin mixture while stirring.
Microwave on high for 3 to 4 minutes, stirring 2 minutes each time. Slide marshmallows into labeled pink heatproof bowl; stir gently until marshmallows melt. Pour marshmallow mixture onto gelatin mold and heat over medium heat long enough to coat marshmallow. Allow to cool completely. Refrigerate remaining mixture while making marshmallow frosting.
