Asian Chicken Breasts Recipe

Ingredients

2 (10 ounce) packages frozen mixed vegetables

1 cup chicken broth

1 cup water

2 tablespoons vegetable oil

1 red bell pepper, seeded and chopped

1 yellow bell pepper, seeded and chopped

1 small onion, diced

2 cloves garlic, minced

3 cups chicken broth

1 cup water

1 (10 ounce) can diced celery

1 head radicchio

Directions

In a saucepan bring chicken broth, water, pepper, bell pepper, onion, garlic and chicken to a boil. Stir. Cover, reduce heat to low and simmer for 20 minutes.

Meanwhile, in a medium saucepan bring chicken broth, water, pepper, bell pepper, onion, celery and garlic crepe mixture to a boil. Heat for 20 to 30 minutes.

Stir chicken, bell pepper, onion, celery and garlic into chicken broth mixture. With hands, mix all of the vegetables. Simmer, uncovered, for 30 minutes.

Stir chicken into chicken broth mixture and stir in chicken pieces. Bring mixture to a simmer and cook over low heat for 10 to 15 minutes.

Stir chicken into vegetable mixture. Cover, reduce heat and simmer for 10 to 15 minutes.

After cooking chicken for 15 minutes, slowly cook the vegetables and stir into the dish. Serve with sliced cooked chicken.
