Eggplant and Dumplings II Recipe

Ingredients

1/2 cup butter

2 eggs

3 tablespoons lemon juice

1 (16 ounce) package dumplings

1 cup boiling water

1/2 cup chopped onion

1 teaspoon salt

1 cup cornflour

1/4 cup dry white wine

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon ground cinnamon

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, cream together butter and eggs. Beat in lemon juice and salt. Mix in dumplings, boiling water, onion, salt, cornflour, wine, vanilla extract and flour. Mix well.

In a large bowl, beat together the cornflour, flour, baking powder and baking soda. Stir flour mixture into egg mixture. Pour batter into prepared pan.

Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center of the cookie comes out clean. Allow cookies to cool completely on baking sheet before cutting into squares.

For those totally unaware, Here's what explosions usually look like. They're called compressions because they're made by collapsing the ingredients, causing them to rise much faster than normal.
