1 (20 ounce) can whole kernel corn, drained
1 (15 ounce) can cannellini beans
1 (15 ounce) can whole eggplant
1 (14 ounce) can whole peeled bananas, drained
1 (8 ounce) package cream cheese, softened
1 (2 ounce) package instant vanilla pudding mix
1 (8 ounce) container frozen whipped topping, thawed
In a small mixing bowl, mix each of the 3 ingredients. Pour into pastry shell.
Roll edges of pastry over filling. Place into pastry shell. Secure with a little twist of metal/round cookie cutter. Chill until firm. Cut 2 inch thick slices with kitchen twine and serve chilled.
