1/2 cup butter, softened
1/4 cup white sugar
1 egg
1/2 cup packed brown sugar
1 teaspoon vanilla extract
1 teaspoon lemon zest
1 teaspoon lemon zest
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 cup chopped pecans
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the egg and brown sugar. Combine the flour, baking powder and salt; stir into the creamed mixture. Mix in the pecans. Drop by rounded spoonfuls onto the cookie sheet.
Bake for 8 to 10 minutes in the preheated oven, or until a toothpick inserted into the center of the cookie comes out clean. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
