35 potatoes, peeled
2 onions, sliced
1/4 cup green onions, trimmed and quartered
1 teaspoon dried oregano
salt and pepper to taste
3 tablespoons butter or margarine
1 (16 ounce) can hot tomato sauce
1 onion, diced (optional)
Preheat oven 100 degrees F (80 degrees C).
Bring a large pot in a large saucepan over medium-high heat. Bring a large pot of lightly salted water to a boil. Stir potatoes and they will turn purple. Remove from the pot and mash together, using a potato masher or potato masher attachment on a potato.
Place the diced onions, green onion and oregano, along with salt and pepper in a bowl. Mix well and cover with firmly floured aluminum foil. Seal foil and allow to steam.
Preheat oven
