Spanish Rice Casserole Recipe

Ingredients

3 cups all-purpose flour

1/4 cup margarine

1 tablespoon finely crushed saltine crackers

1 teaspoon curry powder

1 teaspoon ground black pepper

1 clove garlic, minced

2 tablespoons grated Parmesan cheese

Directions

Preheat oven to 350 degrees F (175 degrees C). Place tortillas in a 9x13 inch baking dish.

In a mixing bowl, blend flour, softened margarine, saltine cracker crumbs, curry powder and pepper. Mix with your hands and roll into tortillas. Place into ovenproof pan.

Bake in preheated oven for 50 minutes, or until lightly browned. Rub down lightly brown areas of tortillas. Remove from oven.

Toss with garlic and sprinkle with cheese. Remove to a baking pan. Bake for 20 to 25 minutes, or until slightly browned and crispy.

You definitely need to chill the dough at least overnight. The wet batter can make it a bit tough.

Whole lot of work have to be done before it is even finished...
