Mini Gingerbread Cookies Recipe

Ingredients

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

2 eggs

2 teaspoons butter

2 tablespoons vegetable oil

1 egg

1 cup flaked coconut for decoration

1 cup chopped pecans

Directions

Preheat the oven to 400 degrees F (200 degrees C). Grease cookie sheets.

In a medium bowl, mix the flour, baking powder, baking soda, eggs and 1 tablespoon butter until blended. Stir the mixture into the egg mixture. Mix in the coconut.

Drop cookies by 1/2 teaspoonfuls onto the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool completely on the baking sheet before removing to the wire rack to cool completely.

Very good, family meal. Mrs. Alexander pointed out the omission of the collard greens, which she also liked. I may omit the parsley in the future, but other than that, I will most definitely make this again.
