Lunch Egg Casserole Recipe

Ingredients

8 small cherry tomatoes, seeded

2 eggs

3 medium eggs

3 medium yellow onions, sliced

Directions

I recently made this primarily to use as a sauce for sandwiches but it turned out so well as a sandwich ingredient that I have used on occasion. The secret is in the blend of ingredients. I often use a blend of red peppers, red onion, garlic and mozzarella cheese but tried to avoid adding any. I put the cheese and meat back together in the oven and when I think of a spreadable balsamic glaze I usually use just vinegar and water but these came out so thick I needed to sprinkle with cocoa. They were sinful! Haute cuisine Clam Chowder was very good but I think this balsamic glaze would have made it even better.
