1 (18 ounce) can sliced pineapple, drained and diced
1 cup shredded coconut
1 cup organic sweet pickle relish
1 (2 liter) bottle ketchup (refrigerator recommended)
1 (4 ounce) can pineapple chunks, drained
1 (4 ounce) can whole peaches, drained
In a large bowl, combine pineapple, coconut, sweet pickle relish, ketchup and pineapple bits. Mix well, and pour mixture into pie pan. Top with peaches. Place pie in refrigerator. Refrigerate for 2 hours, or until firm enough to remove from pie pan.
