1 cup white sugar
1 teaspoon vanilla extract
1/4 cup butter, softened
1/2 teaspoon salt
1 1/4 cups all-purpose flour
Heat the sugar and vanilla in a medium bowl over a saucepan. Slowly pour in butter, salt and flour. Stir vigorously until mixture is evenly distributed.
Remove from heat. Add the baking powder and oil to butter mixture, stirring just until mixture thickens. Spread Fritters on a cookie sheet. Chill at least 2 hours.
