10 pounds skinless, boneless chicken breast halves
1 (10 ounce) package frozen mixed vegetables, thawed
1 tablespoon olive oil
1 teaspoon curry powder
1 clove garlic, minced
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon onion powder
1/2 teaspoon dried sage
1/2 teaspoon dried basil
2 tablespoons chopped fresh parsley
Prepare the curry by heating oil in a medium skillet over medium heat. Sprinkle chicken with curry powder, garlic and salt and pepper. Mix together, stir into curry and heat through.
Preheat oven broiler.
Place chicken in a medium skillet over medium heat. Heat oil to 375 degrees F (190 degrees C). Brush chicken with butter mixture and brown on both sides. Remove from heat and place into a large shallow baking dish.
Bake uncovered in preheated oven for about 1 hour, stirring often.
