2 1/2 cups white sugar
1/3 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
Sift together the flour, baking soda, baking powder, baking soda mixture and pumpkin pie spice. Set aside.
Chop the pumpkin and 1/2 cup of the sugar; set aside. In a small bowl, beat the eggs and 1 teaspoon vanilla until blended. Stir the sugar mixture into the pumpkin mixture. Drop spoonfuls onto the cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until the top is golden brown. Remove from cookies and quickly sprinkle with pumpkin pie spice.
