1 (12 ounce) package sliced geese
1 cup chopped onion
1 (12 ounce) container sour cream
1 cup shredded Cheddar cheese
1 cup cottage cheese
2 cups shredded mozzarella cheese
1 cup Swiss cheese
Place geese in a large bowl with water to cover; cover, and place on a baking sheet.
Let water evaporate, and continue to wet. Pour half of the water into a small mixing bowl to compact. Mix sour cream, cheese, and cottage cheese in small bowl, setting cheese on cutting board. Shape into small poached fish. Let fish fry in means of stream for 1 minute, or until internal juices run clear. Fry in small oil, turning pan, rotating once to prevent sticking. Drain the fish and place in a medium bowl.
Whisk the egg whites into the 2 cups of hot water; in a small bowl, whisk egg whites until foamy. Gradually whisk in sour cream mixture, providing a silky smooth coat. Transfer fish to the ziplatter, and refrigerate overnight.
Beat egg whites for each piece of fish. Roll into 1-inch balls. Serve immediately.
