Easy Bourbon Smoked Salmon Recipe

Ingredients

2 (1 ounce) squares unsalted butter, softened

1/4 cup all-purpose flour

1 (.5 ounce) package lemon flavored Jell-O

3/4 cup boiling water

1 (6 ounce) can frozen lemonade concentrate, thawed

1/2 cup bourbon

1/2 cup light brown sugar

1/2 teaspoon vanilla extract

1 (16 ounce) can frozen cherry pie filling, thawed

Directions

In a blender or food processor, combine butter, flour, gelatin, and boiling water. Blend until smooth. Shape into small pieces and shape into salmon. Remove marinade from blender and pour mixture into a large plastic bag. Place salmon fillet into bag. Mince lemonade and remove from marinade; refrigerate until salmon is cooked.

In a medium bowl, blend lemonade, bourbon, brown sugar, and vanilla extract until well blended. Fold over salmon fillets so that the marinade coats both sides. Pour lemonade mixture into plastic bag with marinated fish.

Preheat grill for high heat. Remove salmon fillets from marinade and place on grill for 5 minutes per inch of measures or to desired doneness.

Place salmon in marinade and marinate in oven for 45 minutes, turning a 2 inches every 3 to 4 minutes. Remove fillet from marinade. Brush with oil and sprinkle with lemons.
