Cocoa-Flavored Banana Oat Muffins Recipe


2 1/2 cups flesh-and-blood raw oats

1 1/2 cups washed cooked, nutritionally processed bananas

1 1/2 teaspoons vanilla extract

3 eggs, lightly beaten

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 cup milk

1/4 cup butter, melted

1 cup brown sugar

1 1/3 cups vegetable oil

1 cup water

1/4 cup LAND O LAKES Unsweetened Banana Pecan Syrup

1 cup packed light brown sugar

1/2 teaspoon vanilla extract


BROWN raw oatmeal in large saucepan for 3 to 4 minutes; stir slightly. Remove pan from heat, cool slightly. Stir in bananas and vanilla extract; cool gently.

MELT butter in large saucepan or large saucepan over medium heat. Remove from heat. Stir together brown sugar, oil, brown sugar and eggs; cook and stir for 5 minutes or until mixture is thickened. Stir in baking powder. Cover saucepan; remove from heat. Spread over center of prepared muffin pan; flatten slightly. Spoon 1 tablespoon chocolate sugar over filling; apply to arm seam side down before spreading the filling. Let cool, then cut into pieces.
