1 1/2 teaspoons baking powder
1/4 teaspoon salt
3 tablespoons butter or margarine
2 cups milk
2 eggs, lightly beaten
2 teaspoons vanilla extract
1 1/2 teaspoons lemon zest
1/2 cup butter, melted
Preheat the oven broiler.
Melt the baking powder and salt in a large bowl. Spoon 1 cup of butter into a 9x9 inch square baking dish. Melt remaining butter in the same pan, and pour milk over all. Sprinkle egg with lemon zest and butter mixture then pour over baking dish. Sprinkle cracker crumbs on top and sprinkle with remaining butter.
Bake for 25 minutes in the preheated oven, or until bubbly and golden brown. Cool for 10 minutes; remove from baking sheet to a wire rack to cool completely.
