Blueberry Gravy Recipe

Ingredients

1/4 cup butter, softened

1/4 cup all-purpose flour

2 eggs

2 teaspoons vanilla extract

1 cup boiling water

3/4 cup milk

2 tablespoons blueberries

Directions

Preheat oven to 350 degrees F (175 degrees C).

To Make Gravy: In a medium bowl, cream together butter, flour, eggs and vanilla until smooth. Beat in boiling water while stirring. Mix blueberries with a spoon into pan and sprinkle over butter mixture.

Bake in preheated oven for 30 minutes, or until golden. You may want to brown the cakes slightly, to prevent sticking. Serve warm, or chill in refrigerator.

The directions said to sprinkle the blueberries on top, but I didn't have any to put in my strawberries. So very little "gravy" and everything went great. The blueberries were the best part, I didn't even bother to sprinkle the icing. One tip, I always prefer to add a tbsp. of powdered sugar to my whipped cream, in place of the brown sugar, for a more "frosting-like". The blueberries give this recipe far more color and body, I may try this again, but it was more fun to make!
