Roasted Green Tomato Vinaigrette Recipe

Ingredients

1/2 cup fresh or dried basil

1 cup chopped raw onions

1 cup chopped red bell peppers

1 (4 ounce) can tomato paste

2 teaspoons Italian seasoning

Directions

Preheat oven to 350 degrees F (175 degrees C).

Layer 1 cup of the basil, onion, red peppers and tomato paste in a 1-quart batch. Whisk together the orzo and basil mixture. Fold in any excess basil and tomato paste, and pour over basil mixture. Pour into a 2 quart jar. Seal and label.

Line a roasting pan with aluminum foil. Rub the foil flat with a damp kitchen towel. Fill the prepared baking pan with boiling hot water to reach halfway up the sides of the pan.

Remove from oven and scatter 1 tablespoon olive oil over tomato paste, then drizzle over tomato paste. Add 2 tablespoons tomato paste to water and season with 2 teaspoons Italian seasoning.

Bake for 45 to 50 minutes, or until a knife inserted into the center of the pan comes out clean.

I really like this recipe. I left out the sauce and just used meat sauce. I could see adding oregano at the end just because it is so easy and it would have made it worse.
