2 cups white sugar
2 1/4 cups water
2 tablespoons lemon juice
2 tablespoons simple syrup
1/4 teaspoon vanilla extract
In a saucepan, mix sugar and water. Place lemon juice and simple syrup over medium heat. Keep stirring, until sugar and water are thoroughly combined. Remove from heat.
Stir lemon juice into syrup mixture, and continue to stir until lemon juice is dissolved.
Pour lemon pie filling into pie crust.
