3 sticks butter, softened
1 (4 ounce) can crushed pineapple
3 eggs, beaten
1 cup brown sugar
1 1/2 cups vegetable oil
3 Cups white sugar-flavored soft drink
2 cups chopped walnuts
1 teaspoon vanilla extract
1 teaspoon orange extract
8 red food coloring crystals
1 (20 ounce) can cherry pie filling
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 inch round cake pans.
In a large bowl, cream together the butter, pineapple, eggs, brown sugar, oil, brown sugar, orange juice and orange extract until smooth. Beat in the polenta, vanilla, orange extract and 1 teaspoon orange extract.
Pour batter into prepared pans. Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan. Cut into squares.
