2 teaspoons butter, reserved
1 Cup fat free Italian-style dressing
1 egg, beaten
1/3 cup mixed vegetables
12 ounces shredded mozzarella cheese
4 ounces shredded pepper jack cheese
Rinse ribs and cut into wedges using meat tenderizer knives.
In a medium bowl, mix in the butter, Italian-style dressing, egg, vegetables and cheese. Chill in refrigerator for 6 hours. Discard marinated marinade.
Remove ribs and meat from marinade. Discard celery slices and onion slices and marinade. Add celery to onion by placing the peel in the center of a large yellow onion. Place the ribs, followed by next 2 ribs, along with mozzarella cheese and pepper jack cheese.
Cover and refrigerate for 1 to 2 hours, mixing occasionally. Bake 15 to 18 minutes, or until chicken is cooked through, turning and basting with reserved marinade.
