2 1/2 cups all-purpose flour for beating
1 cup butter, softened
1 cup butter, softened
1 1/2 cups white sugar
3/4 cup peanut butter
3 eggs
1 teaspoon vanilla extract
1 teaspoon lemon zest
1 cup packed light brown sugar
Remove parchment paper from oven; line oven rack with aluminum foil. Heat oven to 350 degrees F. In a large bowl, mix flour, butter, sugar, egg, vanilla, lemon zest and brown sugar; stir most of mixture into flour mixture. Spread evenly into prepared pan.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 10 minutes before removing to a wire rack to cool completely.
