1 (18 ounce) can whole black beans, rinsed and drained
3 tablespoons olive oil
2 large onions, thinly sliced
2 tablespoons dried oregano
1 teaspoon dried basil
1 (8 ounce) can creamed corn
1 (15 ounce) can whole kernel corn, drained
1 (10 ounce) can diced tomatoes with green chile peppers
Preheat oven to 350 degrees F (175 degrees C). Grease a 12-inch skillet or baking pan.
In a large mixing bowl, season black beans with salt and pepper. Mix in oil, onion, oregano, basil, and creamed corn. Stir the ingredients into brown sauce.
Spread mixture into prepared baking pan. Brush with skillet or spatula. Pour eggs onto bottom of pan. Sprinkle with tomatoes. Sprinkle with green chile peppers and mix all together.
Bake in preheated oven for 45 minutes. Allow to cool.
